Super Bowl Week! Yes, there is a football game but I get excited about all the yummy Super Bowl Foods! I have been working on my menu and I wanted to share this new, favorite of my boys. Seriously it is buffalo chicken and crescent rolls. I mean two amazing things at one time! It is super easy to make. Plus I got a hug from my oldest saying “Mom, you created the best meal ever!”.
2 cups shredded cooked chicken breast
1 T ranch dry seasoning
1/2 cup Frank’s Red Hot (you can use whatever sauce you want- you completely have control the heat it brings. Start with ½ cup and work up if needed.
1 1/2 cups shredded mozzarella cheese
2 refrigerated crescent roll tubes
Dipping Sauces- Ranch Dressing, Bleu Cheese Dressing, Buffalo Sauce
Preheat the oven to 350 degrees.
In a bowl, mix the chicken, ranch seasoning, wing sauce and mozzarella cheese and set aside.
Place one crescent roll onto a baking pan lined with parchment paper. Seal together to form a long rectangle. Open second crescent roll container. Using only half of the dough, add on the rectangle. Reserve the other half for topping.
Place the chicken mixture down the center of the crescent roll. Then bring sides together to form a log shape. Fold the ends in to hold in the filling. Take the remaining crescent roll dough and cut into strips with a pizza cutter. Then lay on top of your newly formed log/roll. Design however you wish.
Bake for around 20-25 minutes or until golden brown.
Serve immediately or refrigerate and reheat when ready to serve. Cut into 1 inch long pieces.
Serve with your choice of dipping sauces and celery.
The countdown is on to the Super Bowl. I wanted to share another yummy appetizer to share at your party. Change it up a little with Blanco Queso. Yummy and you can spice it up with jalapeños. Serve it up with a side of salsa or guacamole. Everyone loves to munch during the game! If you still have friends keeping to their New Year’s goals, consider serving up Cauliflower Poppers or Zucchini Fries. Enjoy creating your Super Bowl menu! -Amanda
Creamy Blanco Queso
8 oz block regular cream cheese, cut into 1/2 inch cubes
1 lb. Monterey Jack cheese, cut into 1/2 inch cubes
1 T salted butter 1 (4oz can) green chiles
1 T jalapeños, minced fine (optional)
4-6 T milk
3 Tablespoons water
In a crockpot combine the cream cheese, Monterey Jack cheese, butter, green chiles and jalapeños. Cook on high for 30 minutes. Stir the mixture until well combined and then add a Tablespoon of milk and water at a time until you reach the desired consistency. (this is all up to you on consistency!) Cook for another 15-20 minutes, or until the cheese is completely melted and combined.
Keep cheese dip in the crockpot on the warm setting until ready to serve. Check on it and occasionally stir throughout the serving. Serve with tortilla chips or warm tortilla.
It’s just a few short hours until kick-off. I’m throwing a “Hail Mary” for anyone that needs a last minute idea. The Mighty Big always scores, well BIG with my family. Invented in my teenage years, it has been served at many family celebrations. We are all geared up for the big game. Hoping my Pop-Pop’s team, The Giants, score big! We know he has the best seats in the stadium! -AF

2- (11 oz) Pillsbury Crusty French Loaf
1/2 cup Italian Dressing
Your favorite sandwich toppings
Open both loaf containers. On a baking stone or sheet, form a circle. Bake using directions on containers, 350 degrees usually about 26 minutes. Let bread cool. Slice horizontally. Take Italian dressing and massage into bottom layer of bread.Using your favorite sandwich toppings, create your Mighty Big. We add ham, turkey, cheese, lettuce, red onions, and tomatoes. Then slice your Mighty Big into handheld sandwiches. Makes about 8 sandwiches.

Preparing for our Super Bowl party, my little chef and I whipped up a tasty treat. We took the classic rice krispie treat recipe and added chocolate. They were so tempting, we sampled early. Worth it! Getting Ready for Some Football! -AF
Football Rice Krispie Treats
3 T butter
1 pkg. (10 oz., about 40) regular marshmallows
6 cups rice krispies
4 pieces chocolate almond bark
1 piece vanilla almond bark
In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat. Add rice krispies. Stir until well coated.
Using a buttered spatula, press mixture into 13 x 9 x 2-inch pan coated with butter. Cool. Cut into footballs. Makes about 15 (depending on the side).
Melt chocolate bark using directions on package. With a knife, coat rice krispie footballs with chocolate. Melt vanilla bark. Create football laces using an icing decorating bag.
Think of all the cute holiday shapes you can design- hearts, shamrocks, & eggs… the list goes on.
Could Not Resist
Jalapeños are a staple ingredient in my family. We love to add spice to our lives and our food This recipe comes directly from my mom. Stuffed Jalapeños are always a hit in my mom’s kitchen. Add this sidekick to your Super Bowl festivities. Plus use it again during your cookouts this summer! I feel it will be a GIANT Super Bowl! -AF
8 oz cream cheese (light works great)
12 slices bacon (may substitute turkey bacon)
Put the jalapeños in boiling water for about 5 minutes. It makes the jalapeños softer and takes less time to cook. This step can be left out if you want to punish yourself.
Cut the jalapeños in half and take the seeds out. (Gloves are recommended for all the known reasons) Fill each half with cream cheese. Cut the bacon in half and wrap around the stuffed jalapeño. Use a toothpick to keep together.
Bake at 350 degrees for 20-25 minutes or until the bacon is cooked. Or you can throw them on the grill.
My parents double the recipe and freeze half. Easy to cook. Take jalapeños directly out of the freezer and cook 40-45 minutes.
I bet I had you at BACON! This dip screams Super Bowl. Cook your bacon ahead of time to prep a quick fix before the game. No one is counting calories on Super Bowl Sunday! So PIG out! -AF
Hot Bacon Dip
8 oz. sour cream
8 oz. cream cheese, softened
3 green onions, chopped
1/2 c mayonnaise, use Hellmann’s on this one
8 oz. sharp cheddar cheese, shredded
1/2 lb. bacon, fried, crispy, and crumbled
Mix sour cream and cream cheese together. Add green onions, crumbled bacon, mayonnaise and 6 oz. cheese. Mix it up. Place in a small oven-safe serving dish and sprinkle with remaining cheese. Bake at 325 degrees for 15 minutes. Serve warm with crackers, vegetables, or chips. For a large group, double recipe and cook for 25 minutes.
